Valley Of Gold by Wild Heaven Beer was evaluated as BJCP 2021 style 24A, Belgian Pale Ale. The beer pours a slightly hazy medium gold (a bit light and a bit hazy for style) with a large head of small and medium ivory-colored bubbles that fades to a persistent layer of tiny-bubbled foam. The first whiff is bready, light bread crust and just a hint of nuttiness, like cashews. There is a pleasant hint of lemon and a hint of honey. Taking the first sip provides a pleasant biscuity, bready and bread crust note that provides a nice base for the medium lemony and medium floral hop character. Bittering is medium-low and smooth. The body is medium, and the finish is long, citrusy, fruity and bready. The yeast contribution is slightly fruity with notes of apple and pear, but also with a light barnyard note (not typical for style, but mostly in the background). Carbonation is moderately high, giving a slight spritz to a very smooth beer, and adding complexity, letting the aroma pop, particularly as the beer warms. There are a couple of slight deviations from the BJCP description of the style, but they are minor and add complexity to the beer. Pair this malty yet fruity beer with a simple (black pepper and garlic) baked chicken breast and artichokes with butter.
