Barrel Aged Saison V by pFriem Family Brewers was judged as a Specialty Wood-Aged Beer (33B BJCP 2021) with a base Saison (25B). A complex aroma is evident in this beer with citrus notes, woody funk, yeast, acidity, leather and quite a mix of other interesting, less obvious olfactory sensations. The color is pale straw with some cloudiness, and a medium, white head rests on the surface. The flavor is also complex. Grapefruit rind is backed by a light malt sweetness as the primary characteristics. Some spicy notes come through in the finish (black pepper, clove). The citrus rind flavor makes for a somewhat cloying or alum-like puckering in the finish as well. Wood notes are subtle and blended into the background with the other flavors (some oaky tannins, probably part of that puckering quality). There are some wild yeast characteristics as well, but nothing that imparts sourness. More like hints of the traditional barnyard qualities you find in some of the aged lambics. Hop flavors and yeast contribute some additional earthy and fruity qualities. The mouthfeel is dominated by the qualities of spice and tannins I noted before, and there are lingering qualities of spice and a touch of sweetness. Overall, there is a lot of character packed into this beer. It can stand on its own or match well and hold up nicely with a rich meal of duck, venison or any wild game.
