We spoke with the BuckleDown Brewing head brewer Ike Orcutt about Clencher.

BC: Who came up with this beer’s recipe?  
I came up with this recipe along with my fellow brew team lead Mike Myers.

BC: What’s your favorite aspect of this beer (flavor, aroma, etc.)?  
Clencher is all about the aromatics. We focus on creating a dank, resinous aroma through our late-kettle and dry hopping progressions.

BC: Where does this beer’s name come from?
It's a big beer with big flavors. When we were coming up with the name for this beer, we noticed that we were clenching our fists while we described the aggressiveness of the flavor profile. Thus, the name Clencher was born

BC: Is this your “desert island beer?”
If we had only time for a short session... yes.

BC: Can you describe this beer in 10 words or less? 
Hugely aromatic with a supporting bready malt body.

BC: Do you know a story – or have a personal story – that revolves around this beer?
This was the first beer we got any press for... thanks to Josh Noel and the Chicago Tribune. For a young business, it was pretty exciting.

BC: What's a good food pairing for this beer?  
Thai curry.
