Thomas Creek Brewery is kicking off the change of seasons with Thomas Creek Honeysuckle Saison. Brewed for spring’s transition away from the hearty brews of winter to the lighter, refreshing beers of summer. With an ABV of 5% Honeysuckle Saison is brewed with wild yeast, by South Yeast, cultivated from the honeysuckle vine, this refreshing saison pours a hazy gold with a fluffy white head. The flavor is dominated by a floral, slight sweetness accompanied by an understated farmhouse-style funk with an earthy sweet, wild yeast aroma.
Saison translates, in French to “season,” it's earliest brew roots is a Farmhouse Ale that can be traced back to the 1700s to the French-speaking Wallonian countryside. It has been called a “rustic agrarian beer.”
There are some beer historians who claim that the Saison was an early form of fuel on farms before industrialization. Having it for the farm workers and staff was critical to a productive harvest on the Wallonian farm and in the farmhouse. Drinkable or potable water was often unavailable on the farms, so it's brewing was essential to the livelihood of the farm, farmers, and workers. Saisons were brewed by the farmers in the fall so that it would ferment in the winter time long before refrigeration so that the brews would be ready in the summer. These farmhouse ales were especially critical during these hot summer months, as seasonal workers (“les saisonniers”) basically survived on Saisons while tending and harvesting the crops. These Farmhouse Ales initially had low ABV, at about 3.5% to quench the thirst of les saisonniers without rendering them le wasted. Creative modern American Craft Brewers produce Saisons that clock in between 5-7.5%

Thomas Creek Honeysuckle Saison will be available at select retail, restaurants and tap rooms throughout South Carolina, the Southeastern United States, and Pennsylvania in 12 ounce bottles, 15.5 gallon kegs and 5.16 gallon kegs.
