We spoke with Funkwerks, Inc. head brewer/co-founder Gordon Schuck and co-founder Brad Lincoln about Funkwerks Saison.

BC: Who came up with this beer’s recipe?
This was the first beer that Brad and I created for Funkwerks.

BC: What’s your favorite aspect of this beer (flavor, aroma, etc.)?
It’s wonderfully balanced. We concentrate on letting the spicy character of our house yeast shine and let the malt and hops support it. It’s fruity and spicy with a hint of acidity but very balanced.

BC: Where does this beer’s name come from?
It’s the style of the beer. When we first opened, saisons were not as common as they are now. As a saison- and sour-focused brewery, we wanted to name our flagship Saison to help spread recognition of the style.

BC: Is this your “desert island beer?”
If I were stranded on a desert island, I would be happy with any beer, but I would be thrilled with Saison.  

BC: Can you describe this beer in 10 words or less? 
Spicy, fruity, herbal and crisp.

BC: Do you know a story – or have a personal story – that revolves around this beer?
This is the very first beer recipe we came up with for the brewery. Brad and I tested different spices and yeast strains by brewing test batches in my backyard. After 9 test batches we landed on batch #6. Eight years and three GABF medals later, it’s the beer that best defines us.

BC: What's a good food pairing for this beer?
Shrimp Scampi over Linguine.
