Birdsong has announced the release date for its next "Take Flight" brew, titled Weasels On Woodpeckers. For more, see below:
Head brewer Conor Robinson started with Birdsong’s Up On The Sun Saison, aged the beer in chardonnay barrels for six months and added fresh peaches.
“We wanted to take our already tasty saison in a different direction with the peach addition,” Robinson says. “We wanted to turn it into a late summer-fall treat that reminded us of the Spring and Summer without dealing with the heat.”
The result is an Earthy, light colored and light bodied saison, 7.5 percent ABV, with subtle sweetness. Secondary fermentation with the peaches gives it a slightly tart character.
Weasels joins other barrel-aged limited releases from Birdsong in what has become known as the Take Flight series, including Mongeese On Monkeys, Puppies on Penguins and Turtles on Pterodactyls. The naming for the latest beer, unlike previous offerings, was inspired by an actual sighting of a weasel on a woodpecker in England, Robinson says. “

Weasels On Woodpeckers will be available on tap in the tap room and at a handful of retail locations in Charlotte starting on Sept. 28. Bomber (22oz) bottles will be available to purchase at the tap room and at a limited number of retail locations across our distribution footprint in Charlotte, the Triad, Triangle, western North Carolina and upstate South Carolina.
